never actually know what the end product will be when I’m developing flavours. I take inspiration from recipes and dishes and then I see where I can take them that’s a little different. I never try to create authenticity, because setting rules in cooking takes the enjoyment out of the experience. there is a point where authenticity and recipes limits the flavour you can create.
Through my products I want to show how I’ve been inspired by the cuisine of Asia, I am not saying that my products are authentic Asian products, they are products inspired by authentic Asian food and belong in a category of their own.
Most of my products start by focusing on a set of ingredients I want to highlight, like lime and coconut or lemongrass and ginger. Then I start to add other complementary flavours until I have my final product.
