This flavour is inspired by a honey cookie from Korea. The focus is on sweet floral honey, a little ginger spice and nutty sesame.
A little bit about honey……
Perhaps not the first ingredients that comes to mind when your thinking of Asian food. But a key ingredient in the cookies this flavour was inspired by. Of course this recipe uses local honey, but the flavour concept is the same. The cookie Yagkwa is considered to have medicinal qualities, largely based on the view of honey as a nutrient capable of curing illness. Whether you beleive in honeys superfood qualities or not, you can’t deny it tastes great.
A little bit about ginger….
Ginger has an incredibly strong place in Asian cooking. It’s uses are endless from savoury to sweet. In the UK we probably focus more on sweet baking, in Asia however it’s probably more heavily used in savoury cooking. Ginger isn’t always included in yakgwa recipes, but it should. Honey and ginger belong together.
A little bit about sesame…..
White sesame is not used as much as black sesame in Asian desserts. Yet in this combination, white sesame is the perfect choice, its lighter but still nutty. In the Korean cookie, sesame sometimes only appears as sesame oil, but in this recipe, sesame seeds are a much nicer fit.

Storage and Shelf life:
All brownies are despatched within 24 hours of baking. They have a shelf life of 2 weeks.
