Banana and Miso are simply not used enough in sweet treats. It’s time to change that, and we’ll tell you why.
A little bit about banana…..
Thought to be the first cultivated fruit, they originte in Southeast Asia. They have a much wider variety and uses for them, so it seems fitting that they have a distinct place in their cuisine.
The most common Asian banana dessert you’ll find, is battered and fried. Mainly associated with Thailand, they can also be found in Indonesia, Malaysia and Singapore.  You can also find a version of banana fritters in India. 
Banana in coconut milk is another Thai dessert. Simple, sweet and creamy. The banana is the star of the show, and so it should be.
A little bit about Miso…
The origins of Miso began in China, when it was introduced to Japan, they refined it further into the miso we recognise today. The different varieties of miso can be classified by raw material, taste and colour.  The most common varieties are red, white, barely and soybean miso.
For these brownies we use Hikari inaka miso (inaka means country or rustic). it has a rich umami strength, and deep salty flavour. Usually you would use it for a rich soup base, or perhaps as an ingredient in a marinade, but its so much more versatile than that.
Miso & Banana…..
Based on flavours alone, this combination was always destined to work. Sweet from banana paired with salty from miso. But how well it works is the surprise, it may be one of our most successful flavours. 
The contrast the miso provides to combat the sometimes overwhelming sweet heaviness of banana, creates a perfectly balanced sweet and salty indulgence.
Both ingredients are used heavily in Asia, just not so much together, lets change that.

Storage and Shelf life:
All brownies are despatched within 24 hours of baking. They have a shelf life of 2 weeks.
Once opened transfer to an airtight container or wrap well, they should keep for a week.
