The usual intense sweetness of Lychee is controlled beautifully by the aromatic cardamom , creating a flavour similar to turkish delight.

native to Southeast Asia, its incredibly popular in cantonese cuisine. With a strong, sweet floral flavour it can divide opinion, but those who like it really love it. For some the fruit is a little too intense which is why I like to balance that with savoury notes. The bitterness of dark chocolate adds an element of this much needed contrast. But it needs something else….
A little bit about cardamom ….
Although more commonly associated with curry, the slightly sweet, heavily fragrant and subtly spiced cardamom, is an aly for citrus. When used with balance and restraint, it can enhance the more complex and subtle flavours of a sweet fruit like lychee.
