We all know chilli & chocolate, now it’s time to introduce star anise.
A little bit about chilli…..
When you hear chilli, you probably first think of hot sauce or chilli con carne. Whilst chillis may have originated in Mexico, they have a very important place in Asian cooking as well.
You have korean red pepper paste, Thai birds eye chillis and kashmiri chillis to name a few. The chilli is used extensively across Asia but mostly in savoury cooking. Chillies enhance and intensify the flavour of a dish, which works just as well for sweet as much as savoury. It’s not about tasting the chilli, but experiencing the sensation it brings.
A little bit about Star Anise….
Star anise are found in the fruit of a tree native to Vietnam and China. It has a very distinct place in Vietnamese cooking as an aromatic. If you know five spice, you definitley no star anise, because that’s what provides the overarching flavour. A little bit goes a long way, just one star anise can bring a wonderful depth of flavour to any pickle or soup. It’s sweet aniseed flavour, when used with restraint, can be a beautiful compliment to chocolate.
Chocolate & chilli meet star anise…..
The aromatic intensity of star anise is nicely balanced with the contrast of the subtle chilli spice. They both cut through the richness of the dark chocolate to intensify the indulgent experience.
These Cookies are a perfect example of balance and restraint. The spices are there to highlight the star of the show, which ultimately is the chocolate. You don’t want to taste the spices, you want to experience them.
