Sweet warming spices with a subtle hit of citrus reminiscant of herbal teas all work to enhance the rich intensity of dark chocolate in these indulgent fudgy brownies.

This flavour combination was guided by my love for star anise, as well as fragrant herbal teas.
A little bit about star anise…
 Star anise packs a lot of  flavour in a very small amount. It’s an excellent infuser in soups, it’s also used as a medicinal tea in China and it’s one of the main spices of 5 spice. I first fell in love with this aromatic when I tried Pho. I knew the flavour, but I’d never experienced it so strongly. It was like being reintroduced to a flavour I thought I knew. Similar to liquorice and aniseed, but more complex and versatile.
Adding the orange….
Orange and star anise just as good, if not better friends than orange and cardamom. It’s much more common to see the pair lending their flavour to duck or pork, but the naturally sweet and fragrant combination enhances the intense indulgence of dark chocolate.
Adding the ginger….
Without the addition of the ginger, the orange and star anise could become too sweet. The spice of ginger breaks up the fragrant sweetness adding another dimension to sharpen your senses. Similarly to star anise, ginger has traditionally been used as a medicine in China, but in this case ginger is used for its flavour.

Storage and shelf life:
All goods are despatched within 24 hours of baking, they have a shelf life of 2 weeks, but they will also freeze well.
Keep them in their packaging or an airtight container and they should stay delicious for a week.
